Maybe try the memoirs of Manstein, I don't know the name or publisher, but he was in charge of the Crimean campaigns in 1941-42 and he also led troops in the Caucasus briefly in 1942.
I don't know about any books covering the Soviet side of these campaigns, it is so hard to come by them anyways, maybe try one of the Russian sites, they might give you some good titles.
