Given the severe limitations on flight deck operatons imposed by the complex catapult and trolly system (proof that German engineers took LSD regularly...they had to what else explains this insane system?) I doubt that the Graf Zeppelin could even launch in heavy seas let alone launch anything except purpose built aircraft that were manufactured specially for the carrier and its systems.
There was no way that something as large as a Ju 88 was going to get launched from its flight deck. As a provider of air cover for a surface raiding expedition the Graf Zeppelin had some potential. Her Me 109T would have been more than a match for British Skua or Fulmar fighers. Defensively, they would provide an adequite CAP. Offensively against even F4F-4 fighters the Graf Zeppelin's airwing was in trouble. Neither the Ju 87 or Fi 187 would have stood much chance against a Wildcat. The handful of Me 109 would have proved marginally capable of defending these aircraft much as the Zero did against well handled Wildcats in the Pacific.
