S-boot stands for Schnellboote or the German equivalent of the US PT boat or British MTB. German boats extrememly fast.
T-Boot stands for Torpedo boat. An upscaled version, flatter appearing than the S-boat. A little heavier armed for defence and could carry more mines.

Like I said the S and T boots as well as many freighters were rushing German refugees, civilans and troops to northern Germany. Can you imagine with untrained folks aboard warding off Soviet a/c and Russian subs and dodging heavy rounds from Soviet land batteries ?
