Let's assume that Moscow was taken in 1941 and the the Soviets surrendered, followed closely by peace between the other Allies and the Axis Powers. Germany annexed Western Poland and what the Soviets had taken of Poland, the areas of Lithuania Germany had claims on, the areas lost to France as a result of WWI (the border region of France and Germany). The Germans also annexed Denmark and it's overseas colonies (Iceland and Greenland), but these are later reformed as puppet nations. Germany pulls out of any occupied nations that are not annexed as a result of the peace, including France, Belgium, and the Netherlands. Lithuania, Estonia, and Latvia are reformed as sovereign nations who's people idolize Adolf Hitler as their savior. Italy annexes Greece and Egypt, and the Middle Eastern nations are made into puppets of Italy (minus Iran and Palestine, who are now German protectorates). Slovakia is still a protectorate of Germany, France's government is replaced with a National Socialist puppet government, Norway is given the same treatment as France, and Sweden finally breaks its streak of neutrality by forming a military alliance with Germany (not formally joining the Axis). Japan replaces China's government with a puppet government and annexes Communist China into this new China.
I am wondering how global politics would change as a result of these events, and what kinds of weapons would have been made after this peace (I doubt that the Tiger or Panther would look exactly the same, if they exist at all in this alternate universe).

IMO, this is not a feasible "what if".

The Germans were in no position in ´41 to annex Iceland, nevermind Greenland. Their navy can in no way, shape or form continue to supply even the token garrison force required. There is nothing to suggest that Britain would seek peace if the Germans defeat the Soviet Union; they weren't seeking peace before Operation Barbarossa, when Germany and the USSR were "friends". Germany wouldn't be able to mobilise all the Russian resources any time soon.

Why would the Western Allies cease fighting, and handover the entire Middle East?

The US would not have put up with a German annexation of Greenland and possibly not Iceland. The latter is likely to declare independence in any case and the US troops there will likely support that position.

Why annex Denmark and not some of the other occupied countries? It would make the peace harder to swallow for the British.

Up until after 7 Dec the war in the Pacific and the war in Europe are separate conflicts. If the peace comes before then or Hitler doesn't declare war on the US then I don't see a Japanese win in China. I'm not sure they win in China in any case. If it occurs after PH I don't see the US coming to terms with the Axis powers although they might with Germany and Italy.

Why would Britain seed the Mideast and Africa to Italy?

Way too many implausible events in this one.
